Feeling hopeful




2009 was a tough year for me. I whined a lot. Too much. I know everyone has hardships, bigger fish to fry, and my problems may not seem like problems to some. But in my head there was a lot of stuff going on. I was a bit of a newlywed, changed jobs, and my perspective on a lot of things. I found out I was the biggest hypocrite I'd ever met. It was a learning year. To those who know me, maybe I haven't changed, but inside things are a little more organized and less panicked. Although still paranoid...that may never change.


But I'm feeling hopeful.


The other day I sat with some girlfriends at happy hour and we had a good talk about the pressures we place on each other. Whether it's a learned behavior, instinct, or the media I can't really say. We talked about how other people's goals, relationships, and how their normal will never be our own normal. Yet we judge, and compare. The grass is always greener. Why not just be happy for them, and happy for ourselves? It's something I have to remind myself often. Quit worrying so much about what others lives, and enjoy your own.


When I think about the future now, things are much more clear and relaxed. Forget time lines for kids and when my dogs will finally calm down. I'm learning to enjoy the craziness that comes with them, and if my eggs get old, I'll adopt. And although I'm still worried about global warming and the polar bears, my very green coworker said in the U.S. we throw away half our food. Which means we can feed all those new babies that are coming into the world. So go ahead and have number 20 Duggars, I won't judge.


It's all about perspective and what you make of it. I was inspired by this post on A Practical Wedding to change the way I think about things. Especially everything Meg from A Practical Wedding has said about what it means to be someones Husband, Wife or Partner. It's different for everyone. So listen to opinions. I love opinions. But keep perspective. It won't be the same for you. Nothing will.


But I feel hopeful. Bring it 2010.

Tequila Cream Ice Cream

For our wedding we decided to forgo wedding favors and show our gratitude by having a tequila tasting bar. Okay, really, im cheap, so this worked perfect.

**okay, I got up for one second to take a lasagna out of the oven and Bryan took it upon himself to finish my sentence...and start a new one. His words in bold.


So, we had a tequila tasting bar. It was like insurance. If something went wrong with the wedding, no one would notice because there was tequila. See how that works? Genius. One of the best things to come out of the tasting bar, aside from the pictures, was 1921 tequila cream.

For Christmas Eve Fiesta this year I made a trio of ice creams. Mexican chocolate, cinnamon, and tequila cream. The tequila cream was by far the best, and the easiest. If you have an ice cream machine, whip this up. You won't be disappointed.


Ingredients:

1 cup sugar

5 egg yolks

1 3/8 cups heavy whipping cream

1 1/8 cups whole milk

3 tablespoons tequila cream

Beat the sugar and egg yolks together with an electric mixer until thick and pale yellow. In a saucepan, bring milk to a simmer. Remove from heat and beat milk into egg mixture in a slow stream. Pour mixture back into pan and place over low heat. Stir until the custart thickens (about 140 degrees). Allow custard to cool for 1 hour, or overnight. Once cool, mix in the heavy whipping cream and tequila cream. Pour into commercial ice cream machine and mix for 45 minutes. Place in freezer to harden.

1st Annual Christmas Party

That's right Shan and Lo, I just committed you to an annual Christmas shindig. Deal with it ;)

Last night we went to Lauren's for a wonderful dinner. She always makes wonderful meals, but this one was extra special because it involved Christmas music and candy canes. I think I'm finally in the Christmas mood. Maybe it's just a wine buzz.

Note to self: Self, play Christmas music and serve candy canes to make things special

And so continues my food marathon. Next year I vow to make friends with Jenny Craig.

And then we ate some more...

My friend Kaitlyn came out this way for the weekend. She was flying out of Seattle, so she stopped off at our place for a few days to visit. She also accidentally left her dog behind. I know, how could someone forget their dog? Okay, maybe I offered to watch him for a few weeks. Don't call me crazy, I'm very fragile right now. Especially with 4 pairs of sad eyes staring at me with expectations. Bryan's are the worst...

Anyway. If you remember when I visited her in Portland, you can guess what we did for those 2 days. We ate. Kaitlyn lived here for a bit so she had some criteria to fulfill. Surprisingly, I was happy to help.
