One lonely can of coconut milk

Last Wednesday night I had plans to go to hot yoga. I hydrated all day long then realized that they changed the schedule on me and Men's Yoga was in my usual time slot. I went to the class anyway. Okay no I didn't, I lack balls. Obviously or I would have been invited in. But it would have made a good story. So Tuesday night I make plans to go to hot yoga...but it was power vinyasa and it would have killed me. So instead I made these yummy recipes with one lonely can of coconut milk. It was like a yoga retreat...without the yoga.


Thai Coconut Curry Shrimp Recipe - : 2 servings (serving size: 1 cup)

Ingredients
1 teaspoon canola oil
1/2 cup chopped onion
1/4 teaspoon red curry paste (such as Thai Kitchen)
1 teaspoon sugar
12 ounces large shrimp, peeled and deveined
1/3 cup light coconut milk
2 teaspoons fish sauce
1/4 cup chopped green onions
1 tablespoon chopped fresh basil


Preparation
1. Heat oil in a large nonstick skillet over medium-high heat. Add onion and curry paste to pan, and sauté 1 minute, stirring occasionally. Stir in sugar; sauté 15 seconds. Add shrimp; sauté 3 minutes or until shrimp are done, stirring frequently. Stir in coconut milk and fish sauce; cook 30 seconds or until thoroughly heated. Remove from heat; stir in green onions and basil." Serve over rice.




Banana Ice Cream Recipe - Daily Unadventures in Cooking: "Raw Banana Ice Cream Recipe"(makes 1 big serving)

2 1/2 frozen bananas
2 tablespoons water (or almond milk, or regular milk, or light coconut milk)

optional add-ins: a Chunk of dark chocolate, a handful of almonds, etc


Add frozen bananas to a food processor or vitamixer. Add water and blend for 5 minutes or until blended scraping sides of bowl occasionally.

Tip- I used very ripe bananas I had in the freezer for banana bread. Frozen in their peel. I nearly got frostbite trying to peel the suckers. Run under warm water for a few seconds if bananas are frozen in peel.

  4. I've never even seen coconut milk, i don't think... But geez I may have to get some so I can try out this bananna ice cream. Oh, and I think we may try out the mexican brownies tonight!!

  5. we have been eating curry ALL the time! and it's so yummy and delicious and easy that i'm pretty much stoked about the situation.

    i am also the queen of frozen bananas... one almost broke chuck's foot off his foot. oops! but now, he can't be mad anymore. i have at least four in the freezer as we speak!

    in other news, are you stalking me? and watching me eat things? i've got my eyes on you.

  8. You should have so gate crashed the men's Yoga. A sock down your shorts and just groan a lot while frequently passing wind and I'm sure you would have got away with it......
