My Mom and I are doing a 30 day Paleo challenge. We started Monday, after we over indulged on Easter candy and I have been doing very well...so far. I fell off the wagon around Christmas time and am determined to get back on. I know I feel better when I eliminate grains and most dairy, but can't seem to resist temptation. I'm like cookie monster, you give me one little taste and it's over. I need to learn some self control.
I'm in it for 30 days this time and we even measured ourselves to track progress. The only thing I didn't measure was my chest, because it can't possibly shrink any further and if it does I don't want to know. I thought I would share a few of my favorite quick recipes so when I feel uninspired I can come back to this post. A few aren't paleo but can be adapted to be paleo or primal. Almost anything can be!
We eat chicken thighs often, I prefer them to breasts.
I've served this over quinoa in the past, but it's good without or over cauliflower rice!
I omit the topping in this one and sprinkle with a little feta instead.
Serve with Greek salad...my mouth is watering.
This is my favorite summer salad recipe. It's a great alternative to cous cous and tabouleh.
Can't wait for grilling weather!..when's that? August?

I'm a thigh gal, too. And drumsticks! I much prefer the dark meat over the white meat. The extra fat gives it SO much more flavor!
ReplyDeleteI honestly don't think I could fully do the paleo diet. Even though I eat far more veggies and protein than grains, I could never give up rice, pasta, or even the legumes! We eat a LOT of lentils in our house. Good luck!

ReplyDeleteyuuuuum. remember that time I tried to "go paleo" yeah, lasted a week. maybe I'll try and get back on the wagon considering I neeeed to lose a few. damn winter weight.
ReplyDeleteThose recipes are awesome! Thanks for the inspiration. We've been doing a {modified} slow carb diet since January....from the 4 Hour Body book. I think it's similar to paleo. It's always good to purge some of those sweets out of your system.

ReplyDeleteI just recently discovered the awesomeness that is cauliflower. I've loved it in my Aloo Gobi for years, but now I make roasted curried cauliflower often, and even the babies love it! I just happened upon a paleo website the other day talking about the havoc hormonal birth control wreaks on bodies, but I didn't venture any further than that. I love my rice, and I never want to give it up!

ReplyDeleteOoh, that sounds challenging. We are also trying to improve our eating lifestyles. For us that means going lean on almost everything...and eating more vegetarian meals. I still can't part with my cheese though. And you might have to pry the bread from my cold dead fingers.

ReplyDeleteMy co-worker went paleo with her husband and she totally got me hooked on curried cauliflower rice!!!! its so awesome! I didn't miss regular rice when I had it -- totally need to start making this again!
